Ingredients:

  • 1 large sweet potato, peeled and cubed
  • 1/2 cup creamy peanut butter
  • 2 eggs
  • 3 cups whole wheat flour
  • 1/2 cup old-fashioned rolled oats

Instructions:

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Cook the cubed sweet potato in a pot of boiling water for 10-15 minutes or until tender. Drain and let cool slightly.
  3. In a large mixing bowl, combine the cooked sweet potato, peanut butter, and eggs. Use a fork or potato masher to mash everything together until well combined.
  4. Add the flour and rolled oats to the mixing bowl and stir everything together until you have a crumbly mixture. Use your hands to knead the dough a few times to bring it together.
  5. On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Use a cookie cutter to cut out shapes or simply cut into squares or strips.
  6. Place the treats on the prepared baking sheet and bake for 20-25 minutes or until lightly browned.
  7. Let the treats cool completely on the baking sheet. Store in an airtight container for up to 2 weeks.
